Your Google search page gets a little touch of Filipino cuisine today as Google Doodle celebrates the local dish adobo. The illustration features a mountain of white rice topped with chicken adobo. It also presents the main ingredients of the dish like garlic and bay leaf, and a large wooden spoon and fork, which are usually seen in many Filipino kitchens and humble food spots.
According to Filipino food historian Felice Prudente Sta. Maria’s “Kain Na!” book, adobo is a Hispanic term that means “marinade.” Each region of the Philippines, even households, has its own way of cooking the beloved dish. Some use anatto oil, while others add coconut milk to their recipe. “Each cook takes pride in a personal version of adobo ranging from saucy to dry,” the author wrote.
Through the years, adobo gained the attention of international foodies, partly due to Filipinos everywhere in the world sharing their home cooking with them. Adobo graced the top lists of travel and food online guide Taste Atlas, became the center of comedian Uncle Roger's vlog, and became part of actress Selena Gomez’s food show. These are just some of the examples of how adobo won the hearts (and tummies) of not just Filipinos, but also the world.
