The Philippine Cocktail Fiesta is taking its biggest step yet, and it's heading south. After a successful inaugural edition in Metro Manila last year, the country's largest cocktail festival will make Cebu its first host city outside the capital when it returns from Nov. 13 to 15. Industry-only events are scheduled for Nov. 12 and 16, marking the start of a rotating host-city program that aims to showcase different Philippine destinations each year.
It's a fitting choice. Over the past few years, Cebu has made a reputation as more than a beach destination. Its thriving dining scene, growing collection of cocktail bars, vibrant nightlife, and great hospitality have transformed it into one of the country's most exciting food and beverage hubs. Whether it's hidden speakeasies in Cebu City, rooftop hotel bars, neighborhood pubs, locally brewed beer, or cocktails by the beach in Mactan, the island offers experiences that extend well beyond its postcard views.
This year's festival will spread across Cebu City, Mandaue City, and Mactan, bringing together local bars, international guests, hospitality professionals, and cocktail enthusiasts for several days of guest shifts, special events, and industry gatherings.
Festival director Tatum Ancheta said moving the event outside Metro Manila reflects what The Philippine Cocktail Fiesta has always sought to celebrate: the country's growing cocktail talent, wherever it may be found.
"Cebu is the natural next step for the festival," Tatum said in a press statement. "Moving the festival allows us to introduce international bars, media, and hospitality professionals from across Asia to different destinations in the Philippines, giving them the opportunity to experience each city's food, drink, and culture firsthand."

Metro Manila, however, remains very much part of the celebration. Bartenders, bars, brands, and hospitality professionals from the capital will join delegates from Cebu, Davao, La Union, Siargao, and other parts of the country throughout the festival.
New this year is the Bar Congress, an industry program featuring masterclasses, panel discussions, and roundtable conversations designed for bartenders, bar owners, hospitality professionals, and brand partners. The full schedule will be announced in the coming months.
The festival is also expanding beyond Philippine shores with the launch of Fiesta Exchange, an Asia-wide guest shift program that sends Filipino bartenders to leading bars across the region while inviting those host venues to participate in the Philippine festival in return. The initiative is designed to strengthen relationships between local and international bar communities while giving Filipino talent greater visibility overseas.
The exchange program has already begun making its rounds. Its first stop was Sidecar in New Delhi in May, followed by Mogā in Singapore earlier this month. Next is A Night in Manila at Dara in Hong Kong on July 26, ahead of Asia's 50 Best Bars celebrations, before the program heads to Bangkok in September with Cebu bartenders representing the city's growing cocktail scene.
The Philippine Cocktail Fiesta debuted in 2025 through a partnership between DrinkCollectiv and Drinks Be With You (DBWY), bringing together nearly 100 participating bars across 10 Metro Manila cities. The inaugural festival featured more than 40 guest shifts and cocktail events, with bartenders from across the Philippines joined by 38 international guest bartenders representing award-winning bars throughout Asia. The event helped position the Philippines as an emerging destination for cocktail culture and hospitality.
Moving the festival to Cebu signals a broader ambition. Rather than remaining centered in one city, The Philippine Cocktail Fiesta is becoming a platform to spotlight the country's diverse food, drink, and hospitality scenes, one destination at a time.
For cocktail enthusiasts, it also offers another reason to visit Cebu this November. Beyond the beaches and lechon, the city is preparing to welcome Asia with a glass in hand.
