Chef Ely Salar's desserts find a fuller home in a new flagship in BF Homes
Pâtisserie Le Choux-Colat was built on a simple idea. Desserts should be made with real ingredients, clear flavors, and care. They do not need a special occasion. They can stand on their own.
That belief comes from Chef Ely Salar, whose career spans Asia and North America and is rooted in Filipino flavors. After years of producing award-winning desserts abroad, his return home revealed a gap he wanted to fill. He set out to create uncomplicated yet premium desserts, made with world-class technique and familiar local notes. In 2020, Pâtisserie Le Choux-Colat was born.
From the beginning, the mission was direct. Offer affordable, high-quality desserts without compromise. Each piece balances familiarity and surprise, with attention paid not just to flavor, but also texture, form, and design. The result is food that feels refined without being intimidating.
As both a chocolatier and chocolate maker, Ely also works closely with the source. He founded El Fortunella, his own farm, where cacao and other ingredients are grown sustainably with local farming communities. Having control from farm to finished product allows the team to keep experimenting and refining.
After a year operating purely online, Pâtisserie Le Choux-Colat opened its first retail store in 2022 at The Podium. The move introduced more people to its signature desserts and marked the brand’s steady growth beyond the digital space.
That growth now extends to a new flagship branch in BF Homes, Parañaque, which is currently on soft opening. The three-storey space serves as home to the brand’s café, Aton Cacao, its line of handcrafted chocolates and cacao products, and the Chocolatier’s Lab where Ely holds masterclasses. The ground floor café serves the patisserie’s signature desserts, drinks, and a new savory menu.
We recently tried several of Le Choux-Colat’s croissants, which offered a clear sense of the brand’s approach. Each bite showed restraint and control, with quality ingredients allowed to speak for themselves.
Ely runs the business alongside his wife and partner, Jiannina, with a team that keeps the focus on craft rather than spectacle. Their goal remains steady. Make everyday moments feel considered, not grand.
