Michelin-starred Chef Zor Tan brings his 'Circle of Life' menu to Red Lantern

Solaire Resort Entertainment City’s Red Lantern welcomes Singapore’s Michelin-starred Chef Zor Tan for an exclusive three-night dining event from November 14 to 16 at 6:30 p.m. Chef Tan, whose Singapore restaurant Born ranked No. 25 in Asia’s 50 Best Restaurants 2024, will personally present an eight-course menu that reflects his Hokkien heritage and diverse culinary influences.
Known for his bold and unexpected flavors inspired by Cantonese, Sichuan, and Taiwanese traditions, Chef Zor crafts dishes that tell stories of heritage, innovation, and emotion. His upcoming event offers diners the rare chance to experience his “Circle of Life” philosophy, where every course is inspired by a chapter from his journey — from childhood memories to professional challenges and global travels
Sweet potato with sea salt ice cream and oolong Chantilly
Among the featured creations is Kanpachi with ginger and watermelon radish, a raw fish salad inspired by prosperity and the Lunar New Year. A Wagyu and oyster bao, one of his signature dishes, honors his mother’s influence and his culinary experiences in Spain. His chestnut velouté with black garlic and macadamia reflects his personal fondness for chestnuts.
Chef Zor also offers an inventive twist on traditional ingredients with abalone served with chicken fat and jade fungus from Yunnan, a King Crab with fish maw and Talangka rice—a nod to Filipino cuisine created exclusively for Solaire—and A5 Wagyu with Soubise and Maitake. Dessert concludes the experience with Bird’s Nest with grape and elderflower syrup and his signature sweet potato puree with crisps, sea salt ice cream, oolong Chantilly, and snow salt.
