Westin Manila introduces plant-based dishes with Chef Mia Sison for Green Mondays


The Westin Manila, in partnership with integrative nutrition coach and raw vegan chef Mia Sison, is bringing plant-based dining to the forefront with its Green Mondays initiative at Seasonal Tastes. This limited-time buffet offering, running until Jan. 27, 2025, aims to inspire healthier eating habits through innovative, wholesome dishes.

"We recognize and understand how most people are looking to reset after a long holiday season," said Executive Chef Rej Casanova. "It's a good time to start fresh and find the right balance. Our partnership with Habits by Mia Sison is anchored on our goal to offer more variety and help you eat well with more wholesome and nutritious options."

The buffet highlights Chef Sison’s signature creations, including Plantbowls—salads featuring a balanced mix of protein, good fats, and carbohydrates. “It’s enough to keep you full and nourished,” she explained. Popular dishes like her Lentil Bolognese Pasta Bowl and Warm Bowls, which feature cooked vegetables, also take center stage.

The featured dishes are part of the One Dish Wonders section of the lunch buffet, where items are prepared à la minute and served on tasting plates. This approach aligns with The Westin Manila's efforts to reduce food waste.

A journey toward wellness

Chef Sison’s journey into plant-based cuisine began two years ago when she discovered her youngest daughter had food sensitivities. Determined to find healthier options, she trained at Sayuri Healing Food in Bali, Indonesia. “I learned how to make dressings out of nuts. I also learned about superfoods and the benefits of raw foods, which are, unfortunately, not easily available in the Philippines,” she said.

Upon her return, Sison embraced her new lifestyle, preparing plant-based meals for her family and sharing her journey on social media. What began as a personal endeavor grew into Habits by Mia Sison, a plant-based food delivery service catering to clients across Metro Manila.

"Our guest chef’s creations speak so highly of her passion in wellness," said Casanova. "She not only serves good food, but she also shares an inspiring story of how she started making lifestyle changes with plant-based food, which we hope will empower the community in their health journey."
