The Westin Manila has introduced Green Mondays as part of its lunch buffet at Seasonal Tastes, aligning with its sustainability efforts to offer variety and empower diners to make thoughtful choices.
“Green Mondays will feature dishes created by our guest chef or in collaboration with a homegrown brand,” said Rej Casanova, the hotel’s executive chef. “This initiative brings the community together, showcases culinary innovation, and supports local and industry players.”
The featured dishes are included in the buffet's One Dish Wonders section, served à la minute on tasting plates. “Guests can select from the lineup, and our chefs will prepare fresh, moderately portioned servings to enhance the dining experience,” Casanova said. “This supports Marriott International's Serve 360 sustainability program by reducing excess food production.”
The Green Mondays launch features a partnership with Dan Puga, executive chef of Burrow Café in Antipolo, a café known for its secluded location, lush surroundings, and unique zero-waste dining concept.
“For this collaboration, we’re highlighting Chef Puga’s signature recipes from Burrow Café,” Casanova said. “It’s an opportunity for city residents to sample his popular dishes while enjoying a zero-waste menu at Seasonal Tastes’ lunch buffet. Chef Puga will join us every Monday until Dec. 9, 2024.”
