Goodbye, sweet pasta

  • Every Pinoy household has a spaghetti recipe which, more often than not, turns off non-Filipinos as too cloyingly sweet. Over the years, I tried to serve pasta using real ripe fresh tomatoes, which are dirt-cheap when in season.

Pasta has become part of the Filipino diet, served and eaten as snacks or meals in place of rice. Every Pinoy household has a spaghetti recipe which, more often than not, turns off non-Filipinos as too cloyingly sweet. Over the years, I tried to serve pasta using real ripe fresh tomatoes, which are dirt-cheap when in season. These days, however, that is no longer practical, with tomatoes selling for ₱140-₱250 per kilo.


The usual canned tomato sauces were of no help, either. They were either too tangy or needed the infusion of fresh herbs, which entailed more time and money.

 

Real Italian sauce in jars 
Searching online, I found the answer to my problem: sauces in jars with the fragrant flavors of traditional Italian cuisine. I need not worry about preservatives, flavorings, and artificial ingredients. More research assured me that this new find is a keeper.
