Flavors of the Philippines take center stage at Conrad Manila's Brasserie on 3

With the month of June celebrating all things Filipino, patrons and food lovers are in for a gastronomic treat as Brasserie on 3, Conrad Manila’s award-winning all day dining restaurant, launches “Flavors of the Philippines.” The latest culinary campaign of the hotel offers the best regional discoveries as elevated by its epicurean ambassadors Executive Chef Warren Brown and Executive Sous Chef Patricia Mesina.
“We are delighted to celebrate the diverse gourmet tradition and heritage of the Philippines, as we take our patrons on a journey of flavors with signature dishes from Luzon, Visayas, and Mindanao,” tells Linda Pecoraro, general manager of Conrad Manila.
At its core, “Flavors of the Philippines” focuses on sustainably-sourced, organic, and local ingredients as showcased at Brasserie on 3’s menu including Sinuglaw (pork belly with mix seafood ceviche), Balbakwa (slow cooked beef stew rich in collagen), Pyanggang Manok (blackened coconut grilled chicken), Beef Kansi, Pork Belly Lechon, Seafood Kare-Kare, KBL (kadyos, baboy, langka), and Gulaman Sago with Biko Turon.

“The main focus that we look on is sustainable and local,” Chef Warren says during the recent launch event. “This is the reason why we came up with this and the three regions, and obviously a celebration as the Philippines goes into celebrating Independence Day.” To add, Chef Patricia shares that ingredients are key in offering the freshest and best quality dishes, and that the majority of Brasserie on 3’s ingredients are local.
“Where possible, we go local,” says Linda, when asked how sustainability plays a role in Conrad Hotel. "You know, we practice good, sustainable practices. I mean today, all of the food that you had with the vegetables and meats are all Filipino raised. Down to the hot chocolate that was served with the bibingka this afternoon is chocolate from Davao.”

With Conrad Manila winning the ASEAN Green Hotel and ASEAN MICE Hotel awards at the 2022 Tourism Standards Awards by the Department of Tourism, the hotel is well-prepared to lead the industry into its recovery from the pandemic by celebrating and elevating the Filipino arts, culture, and culinary scenes.
“It's about being inspiring. And I think Filipino food is inspiring, and during these times, it's about celebrating the culture, the food, and the produce that the Philippines supplies. We're showcasing that so I think that's very important,” shares Linda. “We've gone back to 2019 levels. All of our outlets are open including the spa, gym, China Blue, Brasserie on 3, C Lounge, all of our banquet facilities. We're open and ready for business.”

With prices starting at P2,450 nett per person, “Flavors of the Philippines” is available daily for buffet lunch and dinner until June 30, 2022. Brasserie on 3 is located at Conrad Manila, with operating hours from 12 noon to 2:30 p.m. for lunch and 6 p.m. to 10 p.m. for dinner.
