Thinking of doing the Mediterranean diet? Here are some dishes you can whip up in your kitchen
One of the many things people learn during the peak of the pandemic is the importance of eating food good---not just delicious but healthy dishes. It is one of the building blocks of creating the perfect armor against diseases. Plus, it helps everyone to keep their bodies in a good state. Following a diet no longer means dining on bland food. There are many diets a person can stick to, where one can achieve their health goals while feasting on flavorful and truly sumptuous dishes. A great example of this is the Mediterranean diet.
The Mediterranean diet is a meal plan based on the food traditionally consumed by people living in countries bordering the Mediterranean Sea—France, Spain, Greece, and Italy. According to Healthline, “researchers noted that these people were exceptionally healthy and had a low risk of many chronic conditions.” If you’ve been wanting to try it for yourself, Natural Europe, program project is a multi-program under the 2019 Call for Proposals for the promotion of agricultural products according to Regulation (EU) 1144/2014, together with Greek chef Anthony Kouroutsavouris and Emilie Ignacio of El-Greco Ent., Phils., Corp. held an event spotlighting the benefits that come from the Mediterranean diet.

During the session, the two shared some Greek recipes using some of Natural Europe’s banner products—Ambrosia premium extra virgin olive oil from Cyprus, canned peaches, and Fontana and Cyprina fruit juices. Discover how you can do authentic Mediterranean dishes in your home below.

Colorful salad with Greek peach compote and Greek peach vinaigrette sauce (for four servings)
Ingredients:
(For the salad)
2 Romaine lettuce
½ bundle arugula
1 green bell pepper cut in julienne
1 red bell pepper cunt in julienne
1 head of broccoli (only the florets)
2 pcs. beetroots
1 can f Greek peach
(For the vinaigrette)
250 ml. Cyprus extra virgin olive oil
20 ml. Wine vinegar
Salt
Freshly ground pepper
2 pcs. Greek peach compote
A little of the peach syrup
A little crushed ice
Procedure:
(For the salad)
1. Drain the Greek peaches and wash them to remove excess syrup. Cut them into slices.
2. Remove the stalks from the lettuce and wash them very well Pro tip: It is good to put them in a basin with 1 to 2 spoons of salt and 1 to 2 spoons of vinegar and leave them for about 30 mins. Then rinse well with clean water.
3. Keep some leaves (the most tender ones) from the lettuce and cut the rest with your hands into small pieces.
4. Wash and cut the bell peppers into julienne.
5. Put water in two pots to boil. In one pot, boil the beets until they soften well. In the other pot, dip the broccoli for about 2 to 3 minutes. As soon as the broccoli is ready, transfer it immediately to cold water. Do the same with the beets as soon as they are boiled. Then remove the skin from the beets and cut them into small cubes.
6. In a large bowl, mix all the vegetables with a few slices of Greek peach. Take the salad bowl and transfer the salad mixture, keeping only a few leaves of lettuce and a few pieces of Greek peaches to decorate your salad at the end. Arrange all your ingredients and serve with the delicious vinaigrette.
(For the vinaigrette)
Beat all the ingredients well in a multi-mixer and pour over your colorful salad.
Flambeed Greek yogurt dessert with Greek peach (for one serving)
Ingredients:
50 grams strained Greek yogurt
1 pc. Greek peach compote (washed to remove excess syrup)
30 ml. Liqueur of your choice (Drambuie-Grand Marnier, etc)
Procedure:
1. In a tall clear glass with a stem, put one scoop of the strained yogurt.
2. Place the peach compote on top, whole or sliced.
3. Heat the liqueur slightly in a stainless pot.
4. Before serving the dessert, carefully light the liqueur and pour it over the dessert.
