Chef Jereme and his Water Tiger Specials: Chinese New Year at China Blue

Get ready for a feast!

The Chinese Lunar Year of the Water Tiger is just around the corner. So it’s a safe bet that plans are underfoot in several households on how to celebrate this illustrious occasion. Whether one will be heading out to a restaurant, or order takeaway and dine at home, food will always be the centerpiece of festivities. Conrad Manila is home to China Blue by Jereme Leung, and it’s been a true favorite of mine ever since it opened its doors.

If one is looking for contemporary Chinese cuisine, where food design, presentation, and imaginative use of ingredients, are blended with creative flavors and a strong sense of adventure, then you’ve come to the right place. China Blue has the uncanny knack of making comfort-food dishes, and familiar sought-after favorites, look and feel fresh and exciting. From my favorite, their Dim Sum list, to their Peking Duck and Suckling Pig, there’s always a culinary treat waiting for you when you’ve opted to go China Blue.

For this Chinese New Year, Linda Pecoraro, the hotel General Manager, had this message, “We look forward to ushering the Lunar New Year and celebrating ‘roaring’ new beginnings with our esteemed guests and team members. With the many challenges that we have all faced and succeeded over together in the last two years, we wish everyone good health and prosperity in the Year of the Tiger.”

Taking the cue from this message, China Blue by Jereme Leung’s Executive Chef Eng Yew Khor has come up with Lunar Year specials that can be ordered a la carte, or in a set menu that’s good for 10 persons. There are the traditional Yee Sang Prosperity Toss platter, a box of colorful Nian Gao, and a distinct curated menu.

This curated menu includes Braised Money bag of minced beef with fish lips and spring onion gong chai soup, Braised Abalone stuffed with fish maw and dry oyster in superior egg white and dry scallop sauce, Steamed Lapu-Lapu with shredded mushroom, pork and Zha Chai soya sauce, or go for the Suckling Pig platter and the aforementioned Dim Sum platter.

The China Blue Nian Gao boxes are visual delights, with each tikoy shaped in koi fish or as a mini-gold bar. All to represent good fortune and prosperity. They come in the following flavors—Traditional Brown Sugar, Tropical Coconut, Red Bean, and Sweet Lemon. They come in boxes of six, or more, and they’re also available for pre-order and takeaway—a perfect seasonal gift or giveaway that looks unique and special. 

The Claypot Fragrant Rice.

There’s also a special Claypot Fragrant Rice dish. This very traditional Guangdong dish is made extra special by Chef Khor, as he adds preserved duck meat, river sausage, Chinese bacon meat, vegetables, ginger, jasmine rice, and homemade clay pot soya sauce. It’s fragrant and smoky, and you’ll love how the rice at the bottom is extra toasted, without losing flavor or becoming hard. It’s just one of the new offerings that China Blue has come up with as the menu continues to evolve.
