Regional Filipino flavors shine in a one-night Cebu dining event
The six-hands tasting menu at Fina features Chef Miggy Moreno and Nustar's culinary team

Independence Day celebrations often revolve around flags, ceremonies, and patriotic songs. At Fina in Nustar Resort Cebu, the occasion will be marked through a different medium: food.
On June 12 at 7 p.m., Fina, Nustar Resort Cebu's Filipino dining concept, will host “MALAYA, Flavors of Freedom,” a one-night six-course tasting menu that brings together three chefs for a collaborative dinner centered on regional Filipino cuisine.
Leading the menu is Chef Miggy Moreno, whose modern interpretation of Tausug cuisine earned a Bib Gourmand distinction from the Michelin Guide. Joining him are Nustar Executive Chef Martin Rebolledo and Fina Sous Chef Lloyd Cabalhin, part of the team behind the Hotel, Resort and Restaurant Association of Cebu Inc. Cebu Goes Culinary 2025 overall championship.
The dinner is designed as a showcase of regional flavors viewed through a contemporary lens, with each chef contributing to a menu that highlights the diversity of Filipino cooking. While the individual dishes have yet to be revealed, the focus remains on heritage, storytelling, and ingredients rooted in different parts of the country.
Complementing the six-course meal is a beverage pairing program that includes an internationally awarded signature mocktail created by Fina Restaurant Manager Grant Bacalla. The pairing is intended to accompany the progression of the menu and enhance the experience of each course.
Priced at P4,000+++ per person, inclusive of beverage pairing, the dinner forms part of the Cebu Food & Wine Festival 2026 and continues Nustar Resort Cebu's growing focus on destination dining experiences. Seating is limited.
Over the past few years, collaborative dinners have become a way for chefs to explore regional cuisines beyond their usual menus. In this case, the format also serves as a timely reminder of the country's culinary diversity, with traditions, techniques, and ingredients from different regions sharing the same table.
The event also reflects Nustar Resort Cebu's continuing efforts to expand its culinary offerings through chef collaborations and special dining experiences that place Filipino cuisine at the forefront.
