Center to promote, preserve Bulacan cuisine to rise in Malolos

A new center that will preserve and promote Bulacan’s rich food heritage will soon rise in the city of Malolos.

The Center for Kalutong Malolenyo Studies will serve as a research and training hub for documenting, preserving, and promoting traditional Maloleño dishes.
The initiative aims to ensure that heirloom recipes and food preparation techniques are passed down to future generations.
According to Marichelle Santos of the City of Malolos Arts, Culture, Tourism, and Sports Office (Cmactso), the center is the main outcome of the Huntahang Pamana: Kaluto, Sining, Kultura at Turismo forum, held with support from the Department of Tourism (DOT).
The center will be located in the old municipal hall at the Poblacion Heritage Zone, a building built during the time of President Manuel Quezon. 
It will be renovated through adaptive reuse to preserve its history.
The project supports the city’s wider cultural tourism efforts, including food tours that include visits to historical sites and offer dishes linked to national heroes like.
The center will be housed in the old municipal hall in the Poblacion Heritage Zone, an 85-year-old structure built during the Commonwealth era under President Manuel Quezon. The historic building will undergo adaptive reuse as part of efforts to preserve its architectural legacy while giving it new life.
The project forms part of Malolos' expanding cultural tourism program, which includes guided food heritage tours spanning town centers, farming communities, and coastal villages.
These tours highlight dishes linked to the country’s national heroes. 
Among them are litsong manok sa Saha, a favorite of Andres Bonifacio; tinolang manok which was believed to be one of the favorite dishes of Dr. Jose Rizal; nilagang manok sa puti with asparagus, believed to be a favorite of President Emilio Aguinaldo; pochero which was loved by Marcelo H. Del Pilar; and tempura, a dish enjoyed by Mariano Ponce. 
These are prepared by Bistro Malolenyo, the first and only DOT-recognized heritage restaurant in Bulacan.
The culinary journey also includes kabukiran cuisine, inspired by the Bahay Kubo lifestyle, using fresh produce from backyard gardens and rice fields. 
Meanwhile, kabayanan dishes feature premium ingredients and time-honored recipes, such as the classic menudencia (locally known as menudo).
The Tena sa Latian food tour invites visitors to enjoy an unlimited seafood feast “fiesta style,” showcasing the rich marine resources of Malolos’ coastal areas.
DOT Regional Director Richard Daenos expressed full support for the project, noting that the agency is exploring possible assistance through the Tourism Infrastructure and Enterprise Zone Authority (TIEZA), as well as other funding and technical support mechanisms.
The Center for Kalutong Malolenyo Studies is expected to open in 2027, coinciding with the completion of urban renewal efforts in the Malolos Heritage Zone.
