3,000 sticks of chicken inasal eyed for grilling

Chicken Inasal Festival kicks off in Bacolod

BACOLOD CITY – This city eyes to grill a total of 3,000 sticks of chicken inasal during the Chicken Inasal Festival here from May 21 to 25.

This year’s festival with the theme “Fire and Fusion” kicked off with a ceremonial solidarity grilling of chicken inasal or grilled chicken at the temporary site of Manokan Country at SM City Bacolod on Wednesday, May 21.
Councilor now Vice Mayor-elect Claudio Jesus Puentevella, and Councilors Jude Thaddeus Sayson and Celia Flor, chairperson of the Committee on Market of the City Council, Dee Sacro, president of the Manokan Country Vendors’ Association Bacolod, tourism officer Teresa Manalili, SM regional operations manager George Jardiolin, and mall manager Julia Javellana led the launching of the fifth edition of the festival.
Flor said that this year’s occasion is much grander than the previous editions.
This was the first time that the festival was launched at the temporary site of Manokan Country. The event was participated in by all the 24 tenants displaced by the P4-billion Manokan Country redevelopment project between the city government and SM Prime Holdings Inc.
Flor said that P1.2 million has been allocated for the festival in partnership with some corporate sponsors.
Sacro said they are happy that they were able to launch the festival at the temporary site.
She is hoping that activities will draw diners.
Flor said that the construction of the new Manokan Country in its original site just across the temporary site in Barangay 12 will begin by June and will be completed in 18 months.
Sacro said they are hoping to transfer to the new site soon because of the challenges they are facing in the temporary site such as flooding during heavy rains and the extreme heat.
She said that SM and the city government have acknowledged their concerns and are willing to allot a budget for the installation of extended canopies to accommodate more customers and for their comfort.
The Department of Tourism (DOT)-Western Visayas is excited in celebrating the iconic chicken inasal and the rich heritage that defines the festival.
The department said that the fire theme pays tribute to the traditional grilling method that gives inasal its signature flavor – smoky, savory, and deeply rooted in Negrense culture – while fusion reflects the passion for innovation, bringing global flair into every bite while honoring the soul of the dish.
From local classics to exciting new takes, the festival highlights how Bacolod's beloved inasal continues to evolve, uniting tradition and creativity on one unforgettable plate, the DOT said.
Javellana said that chicken inasal is more than just a meal, as it is a symbol of Bacolod's identity, history, and passion.
She said that this year’s theme reflects the aspiration to share this city’s culinary treasure with the world.
Javellana said that SM City Bacolod has become more than a venue. It has become a vibrant hub for events that honor both tradition and transformation.
The revitalization of the iconic landmark ensures that Manokan Country continues to thrive in the heart of modern Bacolod, not just preserved, but uplifted, with its spirit and legacy at the forefront of progress, she added.
Meanwhile, seven barangays will compete in the Inasal-Inspired Street and Arena Dance Competition. Other festival activities will be held in Upper East Megaworld, and the Ayala Malls Capitol Central.
