Here's a look at some of the hottest food trends coming your way

Trends come and go but food is timeless. Often when we see trends in the food industry, they either become a permanent fixture or fade into obscurity once the trend dies down. In a special event entitled “Food Forward” at The Astbury in Makati City, San Miguel Foods culinary services manager Llena Tan-Arcenas shared a few of the exciting food industry innovations coming our way. Those present were also treated to samples executing these trends, making use of products offered by San Miguel Food and Beverage. Here’s what we can expect from restaurants and supermarkets soon.

Sustainable dining

Environmental sustainability has become the norm in recent years. Since we only have one planet where we get our food from. we must take care of it so that future generations may thrive. On this account, sustainable dining focuses on creating more plant-based and lab-grown meals to offer as meat alternatives. Artificial intelligence, a new rapidly rising player in the field, has also been tapped to contribute to efficient and ecological food production systems. Using the data being fed into the system, some A.I. tools can map out the perfect time and right amount for planting crops. This allows for less food wastage due to crops spoiling from oversupply or planting during the wrong season. Another exciting trend is the newfound popularity of edible containers. Just imagine being able to eat the plate and utensils you used after enjoying your meal!

Health and wellbeing

Health is wealth as consumers start to lean toward healthier choices, taking careful note of what goes into their bodies. For trending ingredients, mushrooms, botanicals, and protein alternatives like hemp, algae, and even insects are expected to rise in the market. Fermented food with sour notes like kimchi, kombucha, and local favorite atchara are also expected to be in demand. Alcoholic beverage enthusiasts can expect several new invigorating flavors with a focus on providing energy and many low-alcohol or zero-proof drinks for casual drinkers.

Borderless global flavors

Taste has no boundaries. Thanks to advancements in technology and people moving around, dishes that were once regional exclusives can now be shared with the world. Fusion cuisine is seen to be on the rise as more cultures mix and form communities of their own, creating an exciting new spin on classic dishes. Local flavors like calamansi, pandan, and root vegetables are also projected to become bigger on a global scale as more people search for unique ingredients. Spicy meals are also seen to be on the rise alongside unusual flavor combinations like sour and spicy or sweet and bitter.

Retro revival and ‘new-stalgia’

As times progress, most of us tend to find comfort in memories that have passed. Currently, we’re seeing ’90s babies and Y2K kids, most of whom are now working adults, fondly sharing the fashion trends, popular music, and old gadgets that were dominating the market. The same can be said for food as retro-themed food, as well as food associated with childhood memories, is expected to take a rise. Who remembers chicken lollipops and hotdogs served on sticks with marshmallows on its end? You’re more likely to see classic favorites added with modern twists to keep the dish going. This fondness for retro-themed things and adding a new spin to them is referred to as “new-stalgia.” Well-loved food brands of the past are also expected to make a comeback.

Self-care reigns supreme as consumers start to focus more on occasionally treating themselves. This trend leads to a tendency to explore new tastes and experiences as consumers start to crave the excitement that comes with trying new things. Indulgent flavors are seen to be the next hot trend, as treats like caramelized or glazed fruits, sweet and savory meals, plus floral and fruit-infused drinks.
