Bacolod's best-kept secret

There is no sophisticated way to tell delicious food. When you bite into something good, you’ll know. There are many levels of deliciousness. There’s good, pwede na, or one that’ll make you involuntarily think of your loved ones, wishing they would experience what you just did. Many of these you’ll find in our provinces.

I’ve been to Bacolod a few times. This place to on my list of top five best dining places, the others being Ilocos, Iloilo, Cebu, and Pampanga. 

There are a few must-places to visit when in Bacolod. Chicken House to me has the best chicken inasal. I’ve debated with a few who think otherwise. It’s always been Aida’s or my choice. In the end, kanya-kanyang taste (to each his own). I also have to visit Aboy’s, Bob’s, Sharin’s Kansi, and Luisa’s Fried Chicken. All I can do is crave for these goodies from here, Manila.

A few years ago, I tasted an authentic garlic lumpia here in Manila. Boom! I knew I had a winner. Wawa Bing’s fresh Bacolod lumpia will beat many lumpias from Bacolod. It’s neat, very well presented, and the taste is simply out of this world. It’s mildly sweet, very garlicky and the ubod is perfectly crunchy. It’s just a winner. Wawa Bing is Mrs. Bing Lopez. Her recipes are your traditional Bacolod staples. Her love and talent in cooking comes out in the taste of her food. Her lumpia has become so famous it is always sold out at bazaars. Salcedo Saturday market is a sample of how popular her lumpia has become.

At many potluck get-togethers, her daughter Liliana always brings other food items Wawa Bing cooks. I love her macaron and pound cake. I am told her new chicken empanada is a winner. Others that will be a hit in any potluck are her prawns thermidor, callos, and salpicao. Many make these but I must say hers is above the rest. You’ll know when you try it. I recently discovered her crab with black beans! Panalo! Everything I mentioned is a must-try!

A lot of people discovered their talent when the pandemic hit. Wawa Bing has always had hers. I want to shout to the country that we have a winner in her many dishes.
