Bacon becomes the perfect pair for wine at this French bistro in BGC

For one night only, Dr. Wine's Chef Marc Carbo reimagines the breakfast staple for a wine pairing event with Baken

For the longest time, a perfect breakfast can be defined as a good cup of coffee with eggs and bacon on the side. Whether you like it crispy or a bit on the tender side, bacon brings to your morning plate a sweet-savory experience, giving you the right flavor kick to start your day. Filipinos love it so much that they eat it at any time of the day, as a tasty inclusion to their salad or something truly decadent in the form of ice cream. This time, the beloved breakfast staple is turned into a series of dishes that go well with your choice of wine.
To celebrate our passion for bacon, premium, all-bacon snack and confectionery line Baken partnered with Dr. Wine BGC as it held its wine pairing event with dishes using the brand’s signature products. Led by Rachel Carrasco and Kelly Parreño, Baken offers anything a porcine-obsessed foodie wants as its products are not bacon-flavored chips, but ready-to-eat real bacon strips that promise a burst of flavor and satisfying crunch.  Feta Cheese Mousse and Bacon Crisp and the Truffle Mousse and Bacon Jam cornettos Last March 4, Dr. Wine’s Chef Marc Carbo and his team got busy in the kitchen as they prepared their special menu featuring the bacon snack. First to grace our table were the Feta Cheese Mousse and Bacon Crisp and the Truffle Mousse and Bacon Jam cornettos. These may look like bite-sized treats but they do pack a lot of flavors. The velvety feta cheese mousse perfectly contrasts the texture of the bacon crisps while the salty-sweet taste of Baken’s bacon jam adds another layer of flavor to the luxe taste of the truffle mousse. Next was the Pizza Tarte Flambée with Bacon Bits and Arugula. Best paired with Chandon Chardonnay or Pinot Meunier - Brut Rosé, this twist on the classic German-French dish makes it truly comforting with its generous topping of bacon and fresh arugula. One of our favorite dishes of the night was the Crostini with Pan-seared Foie Gras and Bacon Jam. A perfect hors d'oeuvre when socializing, this hand-held dish is just a celebration of texture and flavors all in one bite. Vanilla Bacon Cookie Ice Cream with Raspberry Sauce
For a sweet ending, Chef Marc served the Vanilla Bacon Cookie Ice Cream with Raspberry Sauce. A bacon-infused cookie is already good enough, but elevating it with vanilla ice cream and a vibrant raspberry sauce is just \*chef’s kiss.\*
