"Binulo" was founded in Clark, Pampanga by local Maricar Miranda in 2011. The restaurant specializes in serving authentic Capampangan cuisine recipes passed down from previous generations.

Augustine Roa and Aniela Tolentino, a young couple of entrepreneurs, were regular customers of Binulo, a restaurant located in Clark. They used to drive all the way to Clark just to enjoy their meals at Binulo.

Eventually, they proposed to Miranda to become partners and open a new branch of the restaurant in Tagaytay. Despite being approached several times over the past 12 years, Miranda had never considered expanding beyond Pampanga until now.

Binulo comes from the term "Bulo"  which means the traditional way of cooking food inside a bamboo stalk. Binulo’s origins come from the indigenous Aetas, who cook and serve their food in bamboo, eradicating the need for pots and enabling greater mobility when traversing through mountains. Aetas are presently living in various resettlement areas in Pampanga.
