Choose your poison from a fresh lineup of premium Japanese, Taiwanese, and Scotch whiskies paired with a craftily curated bar chow


The nightlife is back. It’s been more than two years since Makati’s destination for premium whiskies, spirits, and more closed as a result of the pandemic lockdowns, but now it’s back.
The extensive drinks list include over 60 single-malt whisky varieties from brands as stellar as Hibiki, Yamazaki, Hakushu, Suntory, Mars, and Nikka from Japan and from Scotland, a whole list of top-shelf brands representing the many regions.
New World Makati Hotel’s Bar Rouge has finally reopened and it’s better than ever with a new lineup of renowned top-shelf brands as well as a menu curated to be worthy of a grand comeback.

The extensive drinks list include over 60 single-malt whisky varieties from brands as stellar as Hibiki, Yamazaki, Hakushu, Suntory, Mars, and Nikka from Japan, as well as Kavalan from Taiwan. From Scotland, the lineup of whiskies highlights various regions, such as Speyside with Glen Elgin, Benriach, Cragganmore, Glenfarclas, Aberlour, Balvenie, Singleton, Macallan, Glenlivet, and Glenfiddich, and the Islands with Tobermory, Ledaig and Talisker. Lowlands, represent with Auchentoshan and Glenkinchie while the Highlands are represented by Glendronach, Stronachie, Dalmore, Dalwhinnie, Oban, Clynelish, Glenmorangie, Old Puteney, and Aberfeldy. Oh but there’s also Islay, the fifth-largest Scottish island and the eighth-largest island of the British Isles, that brands like Bruichladdich, Ileach, Bunnahabhain, Lagavulin, and Ardbeg proudly speak for.
As for whisky cocktails, take your pick from the signatures, such as the Single Malt Whisky Sour, Sazerac, Perfect Manhattan, Peated Amaretto Sour, Boulevardier, New York Sour, Mint Julep, and Old Fashioned.
To be at par with the venerable whisky varieties and cocktails, New World Makati executive chef Giovanni Sias has carefully crafted Bar Rouge’s refreshed menu, which now includes bacon-wrapped cheese-stuffed dates with honey whisky, grilled US striploin cubes with sauteed mushrooms, pan-roasted chorizo bites with toasted ciabatta, poached shrimp cocktail with spicy horseradish sauce, batter-fried onion rings with blue cheese dip, smoked salmon on rye butter bread, warm mini quiche Lorraine, and manchego cheese with warm rosemary focaccia.
