There’s no problem a big brunch can’t solve. For most Filipinos, breakfast is the most important meal of the day, which essentially means that brunch is twice as important.

These days, people no longer head out to grab a quick breakfast or for a casual lunch out with friends.

Sunday brunch, however, has become so popular that in 2015 it has been considered a culture.

Brunch, at the basic level, is a bonding ritual, a social pastime. In the global pandemic, many have come to miss gatherings and face-to-face interactions.

What’s not to like with breakfast without an alarm clock? Brunch is also the perfect excuse to drink (and party) in the daytime.

Today, almost all restaurants offer brunch menus in the Philippines. Waterside’s Sunday BBQ Brunch at the Solaire Resort and Casino is a good choice for those looking for vibrant tasting Western fare.

The brunch, prepared by Chef Alfred Santiago, boasts of a wide selection of smoked meats, grilled staples, seafood wonders, brunch favorites, and tasty desserts, all of which are complemented by simple but delicious cocktails, fizzies, and juices.

While the barbecue is being grilled, diners may enjoy the appetizers, soft cornbread with smoked butter and honey on the side, Texas-style honey wings with ranch, grilled jalapeño with bacon bits and cheddar, as well as nacho chips with queso dip.

A set of crisp salads are also available for those looking for a more balanced entrée. First is the Caesar salad with garlic croutons and parmesan. There’s also a light cucumber salad with tomatoes, red onion, and drizzled with lemon herb vinaigrette. Another is the wedge salad with pork belly burnt ends and blue cheese. And last for the greens is the mom’s potato salad, which has soft-boiled eggs and garden herbs.

For the satisfying brunch classics, a serving of pulled pork eggs Benedict with a complex chipotle hollandaise on grilled English muffin is a must-try. The Scotch eggs with rich homemade beer mustard is also an option. 

If you prefer omelets, the chorizo and mushroom frittata is a delicious alternative that consists of eggs, chistorra sausage, and herb mushrooms. A good blend of savory and sweet, the cornbread waffles with smoked butter and drizzled with maple syrup. The breakfast burrito is an appetizing roll filled with smoked meat, scrambled eggs, and bacon.

Categorized as “brunch favorites” are the crunchy buttermilk fried chicken paired with cornbread and plenty of country gravy, a cottage pie made with smoked oxtail and pork belly burnt ends spiced with paprika and sweetened by brown sugar, a tender slow-roast beef shin paired with a spicy-tangy chakalaka sauce, smoked sausage with cowboy beans, as well as a tender slow-roast beef shin paired with a spicy-tangy chakalaka sauce.

The seafood menu, meanwhile, includes seafood paella, beer-battered fish with chips, grilled oysters with chipotle bourbon butter, and Cajun kingfish.

The main attraction is the smoked meat platter with grilled meats such as whisky-cured USDA short ribs, the bourbon baby back ribs, smoked USDA brisket, barrel smoked pork belly, homemade sausages, and juicy jerk chicken. The platter is served with your choice of sides from Waterside spiced fries to creamy mashed potatoes, creamed corn, or Mac and cheese to compliment the smokiness of each bite.

A variety of cakes and pastries are available for dessert, from chocolate layered moist cake to fun and festive strawberry confetti cake, decadent red velvet to some fudgy and chunky chocolate brownies, classic American pie, New York baked cheesecake, and an assortment of donuts. 

For drinks, one could never go wrong with the classic vanilla milk shake. But for something extra, let your creativity run wild by customizing your own “freakshake” through the special milkshake and sundae bar. Diners can create the most elaborate vanilla milkshake with various cookies and confections and select spirits and liqueurs.

Those who prefer alcoholic beverages may consider Don Papa Cocktails—the Don Papa Maitai composed of mango puree, lime, orgeat syrup and rum, or the Dark ‘N Stormy, made of ginger ale, lime juice, and rum.
