For those who dream of walking the Camino de Santiago, the ancient pilgrimage route through Spain, but are unable to make the journey, Anya Resort Tagaytay offers a culinary experience that brings the flavors of the Camino to life. Known as "El Camino Walk," this seven-course tasting menu is a collaboration between Mikel Arriet, general manager of Anya Resort, and executive chef Chris Leaning of Samira by Chele Gonzalez. The menu, inspired by the northern way of the Camino, invites diners to explore the rich culinary traditions of Basque Country, Cantabria, Asturias, and Galicia—all without leaving Tagaytay.

The Camino de Santiago, or the Way of St. James, is a pilgrimage dating back to the 9th century. The route winds through picturesque landscapes, from dense forests to riverside towns, eventually leading to the cathedral of Santiago de Compostela. Pilgrims, whether religious or secular, often describe the journey as transformative, with each stop along the way offering its own unique history and flavors.

At Samira, the "El Camino Walk" tasting menu brings those flavors to the plate. The experience starts with Gilda and Vermouth, a skewer of olives, salted anchovies, and piquillo peppers paired with sweet vermouth, reflecting the vibrant tastes of Navarre. Next is the Barra de Pintxos, a toast topped with txampiñones (mushrooms), chaka, and pimiento relleno (stuffed peppers), honoring the flavors of Gernika.

The menu continues with Sorropotun, a hearty tuna stew with potatoes, representing the coastal flavors of Santillana del Mar. This is followed by Fabada Asturiana, a rich white bean stew featuring chorizo, pork, and blood sausage from Gijón, showcasing the heartiness of Asturian cuisine.

The meal then transitions to Pargo con Salsa de Erizos, snapper served in a uni sauce, inspired by the coastal dishes of Ribadeo. This is complemented by Carrilleras de Rubia Gallega, a stew of beef cheeks served with creamy rice and Queso Tetilla, embodying the flavors of Lugo.

For dessert, the Pastelito de Santiago is served—an almond cake adorned with chocolate shells and the cross of St. James dusted on top, paying homage to the pilgrimage.
