Eggy Mapu Eggplant

Anyone who finds comfort from tortang talong will definitely love Chef Tatung’s take on Mapu (or Mapo) Eggplant dish. Spicy and full of flavors, the Japanese dish gets an egg inclusion giving it richness, perfectly served with a bowl of steamed rice.

Simpol Pinoy Shakshouka

Chef Tatung brings Northwest Africa to the kitchen with his version of the Maghrebi dish Shakshouka. Apart from the poached eggs, he adds sardines to the mix making it loaded with protein. Savor it with pita bread on the side or warm pandesal.
